For Meatballs

1 lb. Honeysuckle White 93/7 Lean Ground Turkey
2 large eggs
¼ cup quick cooking oats
½ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon onion powder
1/8 teaspoon ground black pepper
1/8 teaspoon celery salt
2 ounces thin sliced deli ham cut into 1/2-inch strips
8 ounces Monterey Jack cheese cut into ½- inch squares
2/3 cup Italian bread crumbs

For Cheese Sauce

1 Tablespoon butter
1 Tablespoon all-purpose flour
1 cup milk
½ teaspoon ground mustard
pinch of salt and pepper

INSTRUCTIONS

Add one inch of vegetable oil to a medium sized frying pan. Heat to 350 degrees F.

In a small bowl, mix together Honeysuckle White 93/7 Lean Ground Turkey, 1 egg,
oats, salt, garlic powder, onion powder, pepper, and celery salt until well blended.

Wrap one cube of cheese with one strip of ham. Shape one Tablespoon of turkey
mixture around the ham and cheese and roll into a ball. Repeat until all meat is used.

Set aside remaining cheese cubes to use in the cheese sauce.

In a small bowl, beat remaining egg with 1 teaspoon of water. Roll each meatball in
the egg then in bread crumbs. Carefully drop into the heated oil and cook for 2
minutes on each side.) Note: The meatballs will look like they are done before the
cooking time is up, but don’t remove them from the grease short of 2 minutes on
each side or the center won’t be cooked and the cheese won’t be melted!)

Depending on the size of the pan, you should be able to cook at least 6 at a time.

Remove from grease and place on a paper towel lined plate.

In a small saucepan, melt butter over medium-low heat. Stir in flour until smooth.

Slowly add milk and heat stirring constantly until mixture thickens slightly. Add
remaining cheese, ground mustard, salt, and pepper stirring until smooth.

Serve meatballs immediately dipped in cheese sauce. Enjoy!

Yields approximately 28 meatballs.
