Hearty & Healthy Italian Turkey Soup

Kids and adults alike love Italian food.  Pizza, meatballs and lasagna are among everyone’s favorite foods, but traditional versions can be fat and calorie bombs. Enjoy the fabulous flavors of Italy without guilt with this substantial and nutritious turkey soup – it is easy to prepare, family-pleasing and absolutely delicious!
 
2 tablespoons light extra virgin olive oil
1 package (1.2 pounds) Shady Brook Farms Ground Turkey
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/2 cup diced white onion
1/4 cup peeled and finely chopped carrot
1/4 cup finely chopped celery
2-1/4 cups reduced-sodium chicken broth, divided use
1/4 cup dry white wine (or 1/4 cup additional chicken broth)
2 (14.5 ounce) cans diced tomatoes with basil, garlic and oregano
1/4 cup grated Parmigiano-Reggiano cheese (plus more for serving, if desired)
2 cloves garlic, minced
1 dried bay leaf
1 (15.5 ounce) can cannellini beans, drained and rinsed
1/3 cup chopped fresh basil, plus more for garnish
 
Add oil, turkey, salt and pepper to a large saucepan over medium-high heat.  Cook until turkey is browned and cooked through, stirring frequently.  Add onion, carrot, celery, 1/4 cup of chicken broth and 1/4 cup of wine (or additional chicken broth); stir until most of liquid has evaporated.
 
Add remaining 2 cups of chicken broth, tomatoes, Parmigiano-Reggiano, garlic, and bay leaf.  Bring to a boil, reduce heat and simmer 10 minutes.  Add beans; continue to simmer about 20 minutes, or until reduced to desired consistency.  Remove from heat; stir in basil.  Taste and adjust seasonings.  Serve garnished with additional basil; pass additional grated Parmigiano-Reggiano at table, if desired.  Yield:  8 servings.
