Tootie Fruity BBQ Turkey Loaf
2 tablespoons vegetable oil
2 stalks celery, thinly sliced
1 medium onion, diced
1 large Gala apple, peeled (if desired), cored and diced
3/4 cup honey barbeque sauce, divided
1 egg
1 cup Panko breadcrumbs
2 pounds Shady Brook Farms 93/7 Ground Turkey
Heat oven to 350 degrees F. Generously coat a loaf pan with cooking spray. Set aside.
Place the oil in a 10-inch nonstick skillet. Add the celery, onion and apple. Cook over medium high heat, stirring often, for 5-6 minutes or until just starting to brown. Remove from heat and let cool.
Meanwhile, in a large bowl, mix 1/3 cup of the barbeque sauce, the egg and breadcrumbs. Add the apple mixture and mix well. Add the ground turkey and mix well with hands. Transfer to prepared loaf pan and pack well with the back of a fork, making a “pattern” with the tines.
Bake for 35-45 minutes or until internal temperature reaches 165 degrees F. Remove from oven and spread remaining barbeque sauce over top. Return to oven and bake an additional 5-10 minutes.
